Ramping Up...

Well, the tax season is starting to ramp up, but it's a slow process. (While people wait for the forms they need to come in the mail). There were no appointments today, so I got to stay home. I picked up a Venti Skinny Vanilla Latte at Fourbucks and have gotten a good start on K's Lucy bag. The whole time I'm knitting it, I'm thinking of the black one I want to make. And the gray one I need to make. Etc...



I also am getting the final items put together so I can send out my package for The Loopy Ewe Swap. I am suppose to include something that represents where I live. I REALLY wanted to get a Barn Happy Mug and coffee, but The Barn is closed for the season. I decided to give the owner a call and she was very happy to meet me and let me buy the mug and coffee! Yeah! Now just to add some chocolate, and it should be ready to pack up and ship off.


I made a new sandwich today for lunch and it was so delicious so I took a picture and thought I'd share the recipe. (It's kind of a combination of several recipes). Hmmm, what to call it.
Maybe


'Grilled Veggie Brushetta on Ciabatta'. Sounds classy.

1/4 cup olive oil
1 sweet onion, sliced thin
1 red pepper, sliced thin
1 orange pepper, sliced thin
1 yellow pepper, sliced thin
1 yellow squash, sliced thin
2 cloves garlic, minced
salt and pepper to taste
1/4 bunch basil, chopped*
1/4 bunch oregano chopped*
1/4 bunch thyme, chopped*
1/4 bunch parsley, chopped*
1/4 cup each of 2 kinds of shredded cheese that melts well
(mozzarella; provolone; Montery Jack; manchego; etc..)
Package of Take and Bake Ciabatta rolls
fresh salsa

1. Place oil in saute pan and heat to medium high. Add onion, peppers, squash and garlic and cook for 10 minutes or until vegetables are soft.
2. Season with salt and pepper to taste.
3. Remove from heat and set aside to cool.
4. When cool, add chopped herbs and blend well.

(At this point the vegetables can be refrigerated until you're ready to assemble the sandwiches.)

5. Preheat oven to 375 degrees
6. Cut ciabatta rolls in half and lightly toast.
7. Place rolls cut side up on a baking sheet or stone.
8. Sprinkle rolls with one of your shredded cheeses. (i.e. mozzarella)
9. Spread cooked vegetables on top of the cheese.
10. Sprinkle with second type of shredded cheese. (i.e. monchego)
11. Heat in oven for 8-10 minutes, until warm.
12. Top with fresh salsa and enjoy!!

TIPS:
* You can substitute 1 tsp dried herbs for the fresh ones.
* If you have access to a Sam's club, they sell bags of peppers (2 each of red, yellow and orange) which are perfect for this recipe. They also sell great vidalia onions.
* Carlos O Kelley's restaurant has the BEST fresh salsa in our opinion. And did you know you can buy two pints of it for $5.35? It's a great deal for fresh salsa!!
* I make up a double batch of the veggies to keep in the fridge. The sandwhichs can then be thrown together in just a few minutes.
* You can also put the vegies and cheeses into a tortilla wrap and make quesadillas with it. Also very good!



Well, off to throw together some Lasagna soup and do a little more knitting. Back to taxes tomorrow.

Hmmmmm! I love a grilled veggie sammy. I make something very similar but on a focaccia. I might just add it to next week's menu

Ugh, taxes. I'm going to have to spend some time helping farmer husband get all the farm stuff ready for the accountant very soon. Not my favorite job. (cuts into knitting time you know!!)
Your swap package looks great, I'm sure whoever you send it to will love it! The sandwich sounds sooo yummy!
ps. I must warn you about the gnomes - if you make one you'll love it, but then everyone around you will want one, too. ; )

i love the barn happy mug you sent me... it's usually the first mug i use when i empty the dishwasher and it's the only one i ever wash by hand in between dishwasher runs to use a second time. i'm glad you were able to get one for your swap partner!

I love the whole fourbucks name. And good for you for being able to get out of there for $4 It is always more of a fivebucks for me. More if I have a child with me.

Your sandwich looks good. I find my Grilled Veggie Brushetta in a jar at the grocery. I am so lazy when it comes to stuff like that.

I see you're still making super yummy foods, and making great stuff. Now you've got me curious about the Lucy Bag. I wouldn't mind one for myself!

Boy do you put bologna sandwiches to shame! Don't say the tax word - I can't even think about that yet! I've got the Lucy pattern and have always meant to make that bag - you're now motivating me to get to it!

I love the "fourbucks" and will be using it myself! :) I wanted to tell you that I made a variation of your Lasagna Soup recipe over the weekend and my husband and I loved it. I will be having some leftovers of the soup for dinner. Thank you! :)

Speaking of Lasagna soup...we love that recipe so much. The last time I made it, I forgot to buy the Italian stewed tomatoes and sauce, but I didn't want to make another trip to the store, so I used what I had on hand--a large can of crushed tomatoes and a small can of diced tomatoes. It was delicious! Thanks so much for sharing the recipe...I know I'll be making it for years to come...and thinking of you every time :)

Mmmm, your bruschetta looks so good. I've made your Lasagna Soup recipe too, and my family loves it.

Was reading your coyote story. We had a Golden Retriever about five years ago. My husband was taking him for a walk in the "filelds" near our house, and he came nose-to-nose with a coyote. My husband thought our dog was a goner, but they both just wandered off in different directions after their brief encounter. Guess they were too surprised to do anything.
